Tapped maple treesTapped maple trees On April 1, I went to the Elmira Maple Syrup Festival, held in the town of Elmira, Ontario, which is not far from Waterloo. This wasn’t an April Fool’s Day joke; every year, the town of Elmira welcomes what must be tens of thousands of people to celebrate the maple syrup harvest. My housemates and I got up at the ungodly early hour of 6 am. We drove to Elmira, got on the back of a trailer to go into town, and proceeded to have pancakes and, what else, maple syrup for breakfast.
